When to use it

Use CCP_MONITOR when a measured parameter is the monitoring procedure for a critical control point — pasteuriser hold temperature, oven exit temperature, fryer time-temperature, chill-tunnel exit, acidified-food pH, metal-detector reject-window pressure — and product may only pass while the parameter is proven inside its critical limit.
