CCP_DEVIATION_LOG
CCP deviation record: opened and sealed at the breach, held open until a named person states a disposition, and withholding product release the whole time.
When to use it
Use CCP_DEVIATION_LOG when a critical limit has been breached and the food-safety system requires a deviation record with the measurement, the limit, the duration and a corrective-action disposition before the affected product may be released.
